<span style="font-size: large;">Also...I'm not ashamed to say that I have an addiction--to Snooze A.M. Eatery! Let me just start by saying I didn't mean to begin this habit...but I fell into the routine of eating at Snooze and then going on a walk the past few weekends. I'm not letting myself feel bad though...because I THOROUGHLY enjoy it! It's research, right? hehehe</span><br />

Yes, those pancakes are blue! These are the Blue Mesa Pancakes: blue corn and buttermilk pancakes studded with sweet corn and topped with a pinion (pine nut) butter and green chile maple syrup. This may sound weird...but I was drawn to it. I was so happy to find out they were delicious! They kind of had a cornbread flavor. No...I couldn't finish them in one sitting, which is saying something ;)</span><br />

Civic Center Park in downtown Denver is where they are located.</span><br />

There was BBQ, hot dogs, tamales, Argentinian fare, Mexican chile bowls, slow-cooker meals, biscuit bowls, pizza and ice cream.</span><br />

<span style="font-size: large;">With it being so hot...I settled on a roasted turkey sandwich with romaine, chipolte mayo and cranberry salsa. I found it at the Street Eats venue (pictured above). The sandwich did not disappoint as it was FULL of flavor!</span><br />

Someone got a beef arepa. I think I'm spelling this dish correctly...it is basically a corn-based, dense pocket of dough that is toasted up like a panini and filled with various fillings. This weekend I went on an adventure with one of my co-workers. She wants to have her wedding ceremony near Winter Park, CO and wanted to check out some locations this past weekend. <span style="font-size: large;">My favorite recipe of the day is the one below...it had so many steps and blue cheese, which I'm normally not crazy about. First there's the caramelized red onions, then the Blue Cheese/chive butter, then the pan broiled flat iron steak, and finally...I sauteed the buns in oil on the stove to add extra love. The umami was flowing! All of those flavors really went well together. </span><br />

<span style="font-size: large;">When I asked around to see what places I should be eating at, everyone mentioned Snooze. It is a downtown Denver-based restaurant that has made its way to multiple locations around the area. It opens at 7 AM on weekends (week days it's 6 AM I believe) and closes by 2:30 PM. To me...I view that as a genius business idea. The popularity of this place is amazing; it's not out of the ordinary to have to wait 2 hrs on the weekends for bigger groups.</span><br />

<span style="font-size: large;">I was sure to take my family here when they visited. It is extremely lucky that there is a Snooze location at Southglenn Shopping Center. After I fell in love after the initial visit...I had to take Anna! </span><br />

<span style="font-size: large;">We ventured out to the new IKEA for lunch...which was pretty brave for it being the third day open! Traffic is still being directed on the roads by police and the amount of people inside of that place is insane! I work with very ambitious people though...so we trudged up the road and had the advantage of WALKING to IKEA.</span><br />

<span style="font-size: large;">One of my co-workers is from Illinois and told us about the Swedish meatballs...so our plan was to order the meal just to say we've had them. Once we got through the huge line our meatballs were the reward :) I will give the workers credit, the line moved fast for how many people were in it.</span><br />

<span style="font-size: large;">We all got the Swedish Meatball Combo, but I was the only one who got the lingonberry sauce and all! It was only $5.33 with tax and included: Swedish meat balls, mashed potatoes, gravy, lingonberry sauce, side salad, and a fountain drink. I may have to go back...I was a very satisfied customer. The Swedish meatballs were WAY better than I expected.</span><br />

The reason for me doing so, was an invitation to come to see a friend who is staying in Louisville. She commutes to Denver daily for an internship. This is the same girl whom I went to the Museum of Art with.</span><br />

<span style="font-size: large;">Those who know me, know that I like to put boundaries up for myself and stay in a safe bubble...it is safe to say I burst that bubble! Driving in five lanes was good for me, I am however holding off on driving in that until the drive home... in which I will be headed the other direction.</span><br />

<span style="font-size: large;">Traveling to Boulder was great fun though! It was our first experience of hiking in the mountains. These were called the Flat Irons (no, not the beef cut-ha) and part of the Colorado Chautauqua National Historic Landmark. We hiked a ways and then took an "air conditioning break" at Starbucks :) Later we drove up the mountain range towards what people were calling Flagstaff (look-out maybe?); the views were breath taking.</span><br />

<span style="font-size: large;">We found some lunch on Pearl Street in downtown Boulder at the aptly-named Boulder Cafe. It was delicious--I ordered a pulled pork sandwich with melted fontina cheese, served with chipolte-rhubarb BBQ sauce. That sauce I will most likely try to replicate! </span><br />

I had such a great experience getting to see the recipes I helped write, test and develop being put under awesome lighting. It was a four-person team: Food Photographer, Food Photographer's Assistant, Food Stylist and Food Stylist's Assistant. Watching them work was entertaining :)</span><br />

<span style="font-size: large;">There were so many different "gadgets" found in a huge tool box to help the food along. Browning pigments, tweezers, cake pedestals, and more were used to enhance the look of the meat as well as put the plates together. Every so often they would ask for our input on how the dishes should look or how the beef should be portrayed.</span><br />

<span style="font-size: large;">Another job of the crew was to keep me and my co-worker fed and comfortable--in which they did with flying colors! They made us breakfast, stocked the fridge with beverages and ordered us in lunch. </span><br />

<span style="font-size: large;">The second day we ordered food from H Burger, a restaurant that serves gourmet burgers and nitrogen ice cream shakes!!!! I knew I always wanted to try buffalo...and they had a buffalo burger on the menu. Everyone urged me to order it...and two others ordered the same thing! This picture displays me being scared of what my Dad would think of me eating a buffalo burger (haha)!</span><br />

<span style="font-size: large;">My family came last weekend and we had a blast! The best part was seeing each other. We explored around Centennial and made our way to Colorado Springs for a day. </span><br />

<span style="font-size: large;">We decided we would "kill two birds with one stone" and horseback ride through the Garden of the Gods. It was a beautiful 97 degree day and we spent it on horses for over two hours! My horse was named Easy...far from the truth! Basically I freaked out at all the eating it was doing and holding up all the other riders. Hattie nearly got bucked off when a horse fly was pestering her horse King. Maemie's horse DeeDee was very well behaved. Let me tell you it didn't seem like a beginner's ride as we were taken up and down steep inclines and drop-offs. We survived anyway :)</span><br />

We chose to sample chocolate-chocolate chip, red velvet, and white chocolate raspberry.</span><br />

<span style="font-size: large;">Let's just start this post with...I LOVE PASTRIES! My love for French pastries in particular started when I went to the Des Moines Farmer's Market with my friends. There is a pastry stand from Le Mie Bakery (business found in Des Moines) that has the best pain au chocolat (chocolate croissants). Of course Hattie chose that one to purchase and I chose a blueberry pastry the first time. When we went back I was sure to get the chocolate one. Hattie struck GOLD! Chocolate croissants are now my favorite :)</span><br />

<span style="font-size: large;">A couple weeks ago the Pastry Chef for NCBA/Beef Checkoff noticed my continued interest in what she does (make amazing desserts). She asked me, "Cassie, if there was one thing you would like me to teach you to do before you left...what would it be?!" I of course answered that I wanted a pain au chocolat lesson! That turned into us preparing various pastries for the morning meeting today! Later we hope to experiment with making beef fillings for these babies!</span><br />

<span style="font-size: large;">This process is a labor of love and the end result is well worth it. She wanted to show me how to make regular croissants and brioche-style croissants. Brioche incorporates eggs and more milk into the dough. It results in a more dense, bread-like texture whereas the other dough yields an airy and flaky texture. I prefer the regular croissants :)</span><br />

Rolling out the first layer. There is a total of 3 folds involved with 30 minutes of chilling in between. This ensures that the butter stays good and cold and doesn't melt into the dough. The more the butter stays in tact...the flakier the result!</div><br />

We made these fillings: blueberry-lemon, strawberry-lime, cream cheese, and CHOCOLATE! Also we made traditional croissants and mini cinnamon rolls!<br />

Brushing all of the fruit-filled and cream cheese ones with an apricot jelly glaze...the chocolate ones got a drizzle and a light sprinkling of powdered sugar! I enjoyed a sampling of the different kinds...but my favorites were the cream cheese done with the brioche dough and the chocolate done with the traditional dough.<br />

<span style="font-size: large;">I participated in a pork competition at DMACC (Ankeny, IA) last semester which was a blast! It's a great feeling to collaborate with friends to make a killer dish. I was in a group with some adventurous palettes and creative ideas. We came up with a pork chop injected with apple cider and chai tea concentrate. Then we created a compote of dried cherries, green peppers, apples, apple butter and sage.</span><br />

<span style="font-size: large;">Needless to say I have been craving that dish ever since we made it last! So I made my own version...except with a cherry bbq sauce! Cherries were simmered in chai tea concentrate and ground sage along with some apples and green pepper. Pumpkin pie spice and onion powder were added at this point. After that reduced, I added a few tablespoons of hickory BBQ sauce. The pork chops were seasoned with salt and poultry seasoning and pan sauteed. I brought my spices with me to Colorado!</span><br />

<span style="font-size: large;">My heart goes out to the farmland and people of Marshall and Grundy County Iowa. It makes me sick to think of what the area must look like right now. Someone posted a picture of a grain bin in Green Mountain and it made me sad. Hopefully things will turn around, I know it is hard to be optimistic at this point.</span><br />

I love cherries and I love Havarti cheese, that is where this all started. So I packed this in my lunch today and was amazed. The tanginess of the cream cheese and the tartness of the cherries is perfectly mellowed out by the creaminess of the Havarti. </span><br />

<span style="font-size: large;">On Saturday, my day started off on the RTD Light Rail headed towards downtown Denver! My station, Dry Creek, is only about 2 minutes away from where I'm staying this summer. Needless to say I was pretty proud of myself that I got on without a glitch. My supervisor at work was nice enough to give me a tutorial on how to use this mode of transportation along with printing off every map and schedule of the city for me, which helped :) It was about a half an hour journey to Union Station, the last stop and my destination. The light rail takes you past Colorado University, Mile High Stadium, and an amusement park.</span><br />

<span style="font-size: large;">A special friend of mine wanted me to post this recipe for her! I made it for the 4th of July BBQ I went to on Monday. Let's just say the BBQ was a blast, with good company and a lot of food--heavy on the protein! We had some grilled pork ribs, petite tenders, steak-wrapped asparagus, and German beef sausage. There were also some fruit salads, pasta salad, and a cobbler with homemade ice cream for dessert. We played some ladder golf and my team won! It was very fun. </span><br />

<span style="font-size: large;">When I got back to my room I could hear fireworks going off. So, I looked out my window on the third floor and I could see five different firework displays! Very cool and memorable :)</span><br />

<span style="font-size: large;">I know that everyone has probably seen a rendition of this recipe before, but here is what I did (adapting it from allrecipes.com):</span><br />

<span style="font-size: large;">2 (3 oz.) pkg. oriental flavored Ramen noodles (reserve seasonings)</span><br />

<span style="font-size: large;">1/4 C. sesame seeds</span><br />
<span style="font-size: large;">1 (16 oz.) pkg broccoli coleslaw mix</span><br />

Whisk together the dressing and the reserved seasoning packets from the Ramen noodles in a separate bowl. Combine the noodle mixture and the dressing. Pour this over the coleslaw; mix and toss to coat.</span><br />

It was gorgeous, more red rocks that I love to see! It was near Littleton, CO. The trail is about 3.5 miles total and weaves around rocks and wildlife. They told me last time they were there they saw a rattlesnake--which made me think of my Aunt Ardelis! We did not see one this time, thankfully enough.</span></div><div align="left" class="separator" style="clear: both; text-align: center;"><br />

The owners are from New Orleans so the menu is Cajun inspired. I had a fried catfish po-boy, trying something somewhat true to the cuisine--any food is helped out by being fried! It was a very nice theater-14 screens. Tom Hanks never disappoints in my book. He wrote it under his Playtone production company. <em>That Thing You Do</em> actors pop up here and there...and Wilmer Valderrama (who will always be Fez to me). The plot is predictable, but it puts you in a good mood after. Julia Roberts co-stars. Now I feel like a movie critic! <span style="font-size: large;">This week has been a whole lot of recipe testing and yesterday I helped cater a meal. We made Argentinian Beef Melts (open-faced sandwiches with chimichuri, roasted red peppers, and provolone cheese), chips and guacamole (starting to love the stuff...it is VERY popular here), a green salad, and dulce de leche butter cookies. <span style="font-size: large;">I should mention that I was introduced to the tri-tip roast this week. WOW! What a great cut of meat. It started off being prevalent in California and is working its way over--hopefully to Iowa soon! You can grill it, roast it, saute it and finish in the oven (I sound like Buba talking about shrimp-haha). Either way it tastes like a cross between a sirloin steak and a filet. I had it served in a Greek Salad.</span><br />

I also have another place to shop, Park Meadows Mall which is a few blocks from where I'm staying, but to me I just feel like I am being swallowed by all of those people by myself (it is comparable to Jordan Creek in Des Moines).</span><br />

<span style="font-size: large;">Usually I do not get too excited about shopping, unless it is at William-Sonoma or Crate and Barrel, but I thought I would give it a chance. What I found is that this shopping center is like a gorgeous park complete with hanging plants and places to eat. There were fountains in a couple of locations and a courtyard. I knew right away that I was going to bring my family here when they come mid-July! Yes, Hattie there is a Macy's and Maemie there is a Mexican restaurant. Mom, I went in to the store Parmida...and it is right up your alley (candles, bowls, maybe even some fake fruit--haha). Dad...you and I can enjoy the scenery!</span><br />

<span style="font-size: large;">My foodie personality took over and I checked out Whole Foods as well. It was quite the experience! The butchers counter had options ranging from bison burgers to scallops. Exotic fruit and veggies filled the produce section. What I will say is you have to pay attention to sales. On special was three pints worth of blueberries for $5.99...on the other hand there was a section with take-home, cut up mixed fruit and berries where two pints equalled a whopping $13.00! I about fainted :)</span><br />

<span style="font-size: large;">I did find some lunch there...again you have to be careful because they sell food by weight. Sorry everyone...I enjoy good salmon once in a while! Also I had some edamame succotash and wheatberry/quinoa salad on the side. I took it outside to eat as there are tables for customers...and it was perfect! Can't wait to show people this hidden gem! </span><br />

</div><div style="text-align: center;"><span style="font-size: large;"><strong>Week 2</strong>: Recipes are researched and written based off of your findings in literature, online, and common knowledge.</span></div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><span style="font-size: large;"><strong>Week 3</strong>: Test sheets are made through the database with "cook's tips" and questions for the tester on the correct amounts in the recipes.</span></div><div style="text-align: center;"><br />

Recipe testers are hired, who are trained in producing proper yields and assigning the correct amounts (knowing conversions, cooked weight, edible weight, etc).</span></div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><span style="font-size: large;"><strong>Week ????</strong>: Recipes can be tested once or as many times as 13! The recipe tester who worked with me today (who is a regular and super awesome) told me she had to make a recipe for a meatloaf that took 13 times! It was for the American Heart Association, and had to contain little fat and low sodium--she said it was a challenge to make it taste good.</span></div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><span style="font-size: large;">The next step after the recipe is to the recipe tester's liking is that the recipe goes under "double check" where it is assigned to another recipe tester to see if the same results are achieved. This way it is known for sure if an everyday consumer could make it consistently.</span></div><div style="text-align: center;"><br />

Every ingredient has to be weighed...an example would be chopping an onion and measuring out 2 cups. The next step would be seeing how many ounces that equals. I browned the meat in batches for the Beef Tikka Masala and had to write how many chunks of stew meat were in each batch and how long each batch was seared before flipping over. Details, details, details!<br />

The dish below in its completion is Beef Tikka Masala. Traditionally, in Indian cuisine this is made with chicken and yogurt. Someone on the team wanted to see how a beef tikka masala would taste. I decided beef stew meat would go good with the flavors...and it was turned into an Indian stew-type of recipe. Also, instead of yogurt I thought we should finish the dish with fat free half and half. Peas are stirred into this flavorful combination made of a ginger tomato sauce and infused with garam masala. This is a spice blend of coriander, cinnamon, and other warm spices...the result is not fiery spice but a warm sensation in the back of your throat. Pretty tasty served with rice!<br />

A co-worker of mine had brought me there previously, but it was my first time going on the trail solo. A lot of people, young and old, use this trail and are very friendly.</span><br />

<span style="font-size: large;">I was glad to have something to get me out of my room as it was a tough day to be away from home. I did celebrate Father's Day though by getting a couple of Krispy Creme donuts and chocolate milk for breakfast (there is an actual Krispy Creme shop dangerously close to me!). Dad was proud :) At the end of the day, we had our first family skype session! Boy was that fun! I got to say Happy Father's Day to my Dad's handsome face :)</span><br />

<span style="font-size: large;">So, back to the trail...beautiful sights! I took a picture of a cottonwood tree for everyone to see. These trees fascinate me...the wind blows their "cotton" everywhere. You have to wear sunglasses just so they don't get into your eyes. They are very pretty trees even though they can be a nuisance. Also, there are some organic honey producers that live along the trail.</span><br />

<span style="font-size: large;">The trail system in Colorado is so smart and easy to follow. There are maps all along the trail telling you where you're at and where you can meet up with another trail. Many people use it for biking because you can go for many miles on it. The trail is also very well-shaded.</span><br />

This naturally-occuring rock formation was turned into an amphitheater in 1910. It houses rock concerts to orchestra concerts...currently Willie Nelson is in concert (I decided to skip that one-haha!). On Monday nights they show movies; July 5th is Top Gun, then the Goonies is after that. The rocks are 6,450 ft. above sea level. These formations are described as being "Great Plains meet Rocky Mountains." That is a very accurate description, as you see beautiful red rocks in one direction and foothills in the other direction.</span><br />

<span style="font-size: large;">The park is near the town of Morrison, CO which is west of Denver (you were right Dad, I do not know my directions...especially here!). We saw people hiking, biking, and also running up the amphitheater seats! It was intense, let me tell you!</span><br />

I work for members of the Innovations group. They are apart of what is known as REI: Research, Education, Innovation.</span><br />

<span style="font-size: large;">My supervisor thought it would be good for me to get to know members of the REI team and have them give me some resources while I am here in Colorado. This has been very successful!</span><br />

<span style="font-size: large;">I learned about the chuck roll and even saw it fabricated right in front of my eyes! There is a woman on staff who has a masters from Texas Tech and is very qualified to cut beef. Later I got to be the person who ground up the trimmings and cryo-vacced the meat for her :) </span><br />
<br />
<span style="font-size: large;">The chuck is split into two different portions, the chuck roll and the chuck shoulder clod. Many of you may have already heard about new value cuts from the clod as that was researched first. This is where the flat iron steak, ranch steak, and shoulder petite tender are located. Work done with the chuck shoulder clod rose the value of the entire beef carcass by $70/head; therefore work was to be done with the chuck roll (REI 2009 Annual Report). December 2006 is where they mark the start of technical work on the chuck roll.</span><br />
<br />
<span style="font-size: large;">To find the tender cuts within the connective tissue, requires skill and precision which cannot be done on the line somewhere. The value added to these cuts are because it is manual labor for someone to cut these. What beautiful cuts of meat they are!</span><br />

The unit also came with a large and small saucepan, a stock pot, saute pan, a cutting board, colander, a spatula, silverware, cereal bowls, plates, and glasses. I am well-equipped!</span></div><br />

<span style="font-size: large;">The other day I was introduced to the department members at their monthly board meeting. The culinary team made the meal to go along with it as well as catered an event for another meeting in the office. </span><br />

<span style="font-size: large;">As we were making a Cabernet Sauvignon BBQ sauce for brisket sandwiches, a co-worker decided that we would only have enough to feed one of our groups for the day. So my supervisor said...why don't I make loose meat sandwiches for the board meeting? I instantly thought...what a great reminder of home!</span><br />

<span style="font-size: large;">An added touch, was a decided "maid rite sandwich bar" where there was sauteed mushrooms, jalepenos, shredded cheese, ketchup, mustard, and...VELVEETA CHEESE SAUCE! Why had I never thought of that?! Basically a sauce was made by thinning out velvetta cheese, only slightly because the idea was for the spoon to get stuck in the bowl and glupped up for the next person in line :) </span><br />
<br />
<span style="font-size: large;">Of course I tried this delicious sauce and added sauteed mushrooms to my maid rite! It was FANTASTIC! We also had potato salad (that was my job--I didn't make Ann's version though...NCBA does not need to know her secrets-ha!), baked beans, chips, and angelfood cupcakes. These cupcakes were a great idea from our pastry chef who made individual, light-as-air, cupcakes and set out the fixins for a strawberry shortcake! </span><br />

We made fajitas for lunch...and practically the whole day I was thinking about the Friends episode where Ross made fajIII-taSSS :) It was a good day though, I learned how to work with flank steak...AND it was YUMMY!
